​​Founded in late 2022 by scientist Jennifer Hunt and creative visionary Shannon Hunt, Lily Fields is a independent Sydney Gin Distillery dedicated to creating premium, small- batch spirits that showcase the best of Australian craftmanship.​

With a background in science, creativity, and a shared love of spirits, we took a bold leap into the world of craft distilling. What started as countless hours of research, experimentation, and tasting sessions has grown into one of Australia's most exciting new distilleries, producing award - winning gins that stand among the best in the country.

The Journey Begins – Sydney Dry Gin

​

Our first release, Sydney Dry Gin, was born out of a pursuit of perfection. After extensive research and development, we created a beautifully balanced, bright, and crisp gin with a juniper backbone, fresh citrus from Ruby Grapefruit sourced directly from the Orange Grove markets in Lilyfield, and a unique wild-grown pepper tree botanical.
